There is no one food, drink, pill or machine that is the key to achieving optimal health. A person’s overall daily routine is what is most important. That is why, as part of National Nutrition Month® 2015, the Academy of Nutrition and Dietetics urges everyone to "Bite into a Healthy Lifestyle."
This year’s theme encourages consumers to adopt a healthy lifestyle that is focused on consuming fewer calories, making informed food choices and getting daily exercise in order to achieve and maintain a healthy weight, reduce the risk of chronic disease and promote overall health.
Fiesta Corn Salad
2 16 oz. cans of corn- drained
1 can of black beans, drained
1 jar of your favorite salsa
1 small onion diced
1 tsp Olive Oil
½ tsp pepper
½ cup fresh Cilantro- chopped
Salt to Taste
Mix all ingredients together in a bowl, chill and enjoy. Makes 6- 1 cup servings- only 160 calories.
You can also add sliced avocado for an extra special treat.
Slow Cooker Chicken Chili
1 roasted Chicken (no skin) – chopped/ diced
1 small l onion- diced
1 Tbsp of fresh Garlic-minced
2 16- oz cans of Diced Tomatoes
2 16- oz cans of Tomato Sauce
2 cans of Black Beans- drained
1 can of Corn
½ tsp Salt
1 tsp Pepper
1 tsp chili Powder
1 tsp cumin
¼ tsp ced pepper Flakes
cilantro- chopped
Place all ingredients (except cilantro) in Slow Cooker, cover and set on high for 2–3 hours. Stir and reduce temperature to Low, cover and cook for another hour, then stir in the cilantro and enjoy. Makes about 8- 1 cup servings at around 300 Calories per serving.
